Glucose/maltose syrup is a purified concentrated solution made up of glucose, maltose and
other nutritive saccharides. It is manufactured from starches and is less sweet than that of sugar
(sucrose).
Glucose syrup is hygroscopic, adds viscousity, sweet, has high fermentability, aids in browning
reactions and adding body and mouth feel in products.
It is the most common substitute for sugar in confectionery, food products such as, crytallised fruits,
baked products. instant food, beverages, creamers/whiteners, in pharmaceuticals and brewery.
Glucose syrup can be used with many varieties of dry solids and not affecting their sweetness, ash
content, acidility, etc, thus, can be used in a whole range of industries, even in non-food products.
